Eric’s Fantastic Oatmeal Raisin Cookies

Mix wet ingredients first:

1 cup (230g) unsalted butter, softened to room temperature or melted in pan
3/4 cup (200g) packed light or dark brown sugar
1/4 cup (50g) granulated sugar
3 large eggs
1 tablespoon vanilla extract (yes, tablespoon!)

Mix Dry ingredients next:

3/4 cup white flour and 3/4 cup whole wheat flour
Optional: 3/4 cup ground unsweetened coconut flakes (small)
1 teaspoon baking soda
1 and 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
3 cups (240g) old-fashioned rolled oats
1/2 cup shelled sunflower seeds
1 cup – 1 and 1/2 cup (140g) raisins
1/2 – 3/4 cup (64g) chopped toasted walnuts or almonds (optional)

Mix wet and dry ingredients together.

Bake in a 180 °C oven for 10-12 min.
